Ingredients:
- 1500 g chicken, cut into 8 pieces
- 2 cups (400 g) soaked basmati rice
- 4 cups (1000 ml) water
- 1/4 cup (60 g) raisins
- 1/4 cup (60 g) toasted almonds, halved
- 1 tablespoon (15 g) butter
- 1 teaspoon (5 g) turmeric
- 1/2 teaspoon (2.5 g) saffron
- 1/2 teaspoon (2.5 g) turmeric
- Salt and black pepper to taste
Instructions:
- Preheat the Oven:
- Preheat your oven to 220°C (430°F).
- Prepare the Chicken:
- Wash the chicken pieces thoroughly.
- Make a few small cuts or holes in the chicken to allow the flavors to penetrate.
- Season the chicken on all sides with salt, black pepper, and 1 teaspoon of saffron. Set it aside to marinate for 30 minutes.
- Prepare the Rice and Raisins:
- In a medium-sized pot, combine water, butter, salt, black pepper, turmeric, the remaining 1/2 teaspoon of saffron, bay leaves, and cardamom.
- Place the pot over medium heat and bring the mixture to a boil.
- Prepare the Rice and Almonds:
- In a Pyrex dish or a clay casserole dish, combine the soaked basmati rice, raisins, and halved toasted almonds. Stir to combine.
- Assemble and Bake:
- Pour the seasoned water mixture over the rice, raisins, and almonds in the dish. Stir to evenly distribute the ingredients.
- Arrange the marinated chicken pieces on top of the rice mixture.
- Baking:
- Cover the dish with aluminum foil or its lid.
- Place the baking dish in the preheated oven and bake for 60-75 minutes or until the rice is cooked, and the chicken is tender and fully cooked.
