Peanut Butter Balls with Chocolate Rice Krispies

Ingredients:

  • 1 cup Crunchy Peanut Butter
  • 6 tbsp Honey
  • 1/8 tsp Salt
  • 3 cups Rice Krispies Cereal
  • 1 1/2 cups Vegan Chocolate Chips

Instructions:

  1. Line a muffin pan with liners and lightly spray them with non-stick spray.
  2. In a saucepan, melt the crunchy peanut butter, honey, and salt together over low heat. Stir until the mixture is melted and well combined. Remove from heat.
  3. Stir in the Rice Krispies cereal, ensuring it’s well coated with the peanut butter mixture.
  4. Evenly distribute the mixture into the muffin pan liners, pressing down firmly to create compact treats.
  5. In a separate saucepan, melt the vegan chocolate chips over low heat. Stir constantly until the chocolate is fully melted. Remove from heat.
  6. Spoon the melted chocolate over each treat, distributing it smoothly and evenly.
  7. Allow the treats to cool and the chocolate to set, which takes about 1 hour.
  8. Once they are set, remove the treats from the muffin pan, and they are ready to enjoy!
