PINEAPPLE COCONUT SNOWBALLS

Ingredients:

  • 1 (8 ounce) package cream cheese, softened
  • 1 (8 ounce) can crushed pineapple, well drained
  • 2 1/2 cups flaked coconut

Directions:

  1. When draining the pineapple, use a fine strainer to push out as much juice as possible. This will make the mixture firmer and easier to work with.
  2. In a small bowl, beat the cream cheese and crushed pineapple together until well combined.
  3. Cover the mixture and refrigerate for 30 minutes to firm it up slightly.
  4. After chilling, roll the mixture into 1-inch balls using your hands.
  5. Roll each ball in the flaked coconut until evenly coated.
  6. Place the coated balls on a baking sheet lined with parchment paper.
  7. Once all the mixture has been rolled and coated, refrigerate the snowballs for at least 6 hours or overnight to allow them to set and firm up further.
