Pineapple Quick Bread

Ingredients:

For the Bread:

  • 2 cups flour
  • 1 can (20 oz) crushed pineapple (drained, reserving 2 tablespoons juice)
  • 1/2 cup sour cream
  • 1 cup sugar
  • 3 oz cream cheese (softened)
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 tsp vanilla extract
  • 1 egg (beaten)

For the Glaze:

  • 1⅓ cups powdered sugar
  • 2 tablespoons reserved pineapple juice

Instructions:

  1. Preheat oven to 350°F and grease a 9×5-inch loaf pan.
  2. Cream together cream cheese and sugar, then mix in egg and vanilla.
  3. Add sour cream and blend.
  4. In another bowl, sift together flour, baking soda, and salt. Gradually combine with wet mixture.
  5. Fold in crushed pineapple, reserving 2 tablespoons.
  6. Transfer batter to pan, bake for 60 minutes.
  7. Cool in the pan for 10 minutes, then on a wire rack.
  8. For the glaze, mix powdered sugar and reserved pineapple juice. Drizzle over cooled bread.
