Pineapple Upside-Down Cake

  • 2 cups sugar

Instructions:

Step 1: Prep the Pan

Step 2: Cook the Sugar Mixture

  1. In a medium saucepan, combine sugar, butter, and heavy cream.
  2. Place over medium heat and bring to a boil.
  3. Reduce the heat to medium-low and simmer for 7-10 minutes, stirring constantly, until a candy or instant-read thermometer registers 234°F (112°C), reaching the “softball stage.”

Step 3: Add Chocolate and Flavorings

  1. Remove the saucepan from the heat.
  2. Stir in the white chocolate chips until fully melted and the mixture is smooth.
  3. Mix in pineapple juice, cake mix, and marshmallow cream until well combined.

Step 4: Incorporate Pineapple

  1. Fold in the dried pineapple cubes into the mixture.

Step 5: Assemble the Fudge

  1. Pour the fudge mixture into the prepared baking dish.
  2. Gently press the cherry halves, cut side down, into the top of the fudge, spaced evenly apart.

Step 6: Set the Fudge

  1. Refrigerate the fudge for 2-3 hours or until it is firm and set.

Step 7: Serve

  1. Once set, lift the fudge out of the dish using the parchment paper overhang.
  2. Cut into squares, ensuring each piece includes a piece of cherry.
