Ingredients

Instructions
Prepare the Roux:
- In a heavy pot, heat vegetable oil over medium heat. Gradually whisk in the flour to create a roux.
- Continue cooking the roux, stirring constantly, until it reaches a rich brown color. Be patient, as this can take about 20-30 minutes. Ensure not to burn it.
Saute the Aromatics: 3. Add chopped onion, bell pepper, celery, and minced garlic to the roux. Cook until the vegetables are softened and aromatic.
Add Sausage and Spices: 4. Stir in the sliced Andouille sausage, bay leaves, dried thyme, dried oregano, paprika, cayenne pepper, salt, and black pepper. Cook for a few minutes to combine flavors.
Add Broth and Tomatoes: 5. Gradually pour in the seafood or chicken broth, stirring to incorporate the roux mixture into the liquid. Add diced tomatoes with their juice.

Add Seafood: 7. Gently fold in the peeled shrimp, crabmeat, and drained oysters. Cook for an additional 5-7 minutes, or until the seafood is cooked through and opaque.
Serve and Garnish: 8. Serve the seafood gumbo over cooked white rice.
