SPICY MEXICAN RUB CHICKEN & CHORIZO PASTA

Ingredients:

  • 2 x 170g Chicken Breast
  • JD Seasonings Mexican Rub
  • 160g dried pasta
  • 100g Philadelphia Lightest
  • 1 red onion, diced
  • 1 red pepper, diced
  • 2 large garlic cloves, minced
  • 1 tsp Mexican spices
  • 0.5 tsp Cayenne pepper
  • 100 ml chicken stock
  • 40g sliced chorizo
  • Fresh coriander, for garnish

Instructions:

  1. In a frying pan, sauté the red pepper and onion for 5 minutes. Add 0.5 tsp of the JD Seasonings Mexican seasoning, stir, then add the garlic and continue to fry for another 1-2 minutes.
  2. Dice the chicken breasts and add them to the pan. Season with an additional 0.5 tsp of Mexican spices and 0.5 tsp of cayenne pepper. Fry until the chicken is cooked through.
  3. While the chicken is cooking, boil the pasta as per the package instructions.
  4. As the chicken nears doneness, add the chicken stock and Philadelphia Lightest to the pan. Stir well until the Philadelphia cheese melts and the sauce thickens, about 5 minutes.
  5. In a separate pan, fry the chorizo slices until they are crispy, about 2 minutes.
  6. Combine the cooked pasta with the chicken mixture, stirring well.
  7. Transfer to a serving bowl, top with the crispy chorizo and garnish with fresh coriander.
