Stuffing Balls

Ingredients:

  • 1 cup finely chopped celery
  • 1/2 cup chopped parsley
  • 1/2 tbsp ground sage
  • 1 1/2 tsp dried thyme leaves
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 6 cups low-carb bread, toasted and chopped
  • 6 cups cornbread stuffing
  • 1 large egg, slightly beaten
  • 1 can chicken broth

Instructions:

  1. Preheat your oven to 375°F (190°C) and grease a baking pan.
  2. In a skillet, sauté the onions in butter over medium heat for about 10 minutes, or until they become translucent.
  3. Add the chopped celery, parsley, ground sage, dried thyme leaves, kosher salt, and black pepper to the skillet. Continue to sauté for an additional 5 minutes. Remove from heat.
  4. In a large mixing bowl, combine the toasted low-carb bread, cornbread stuffing, beaten egg, and 3/4 cup of chicken broth with the sautéed mixture. Mix until everything is well combined.
  5. Shape the stuffing mixture into small, bite-sized balls and arrange them on the prepared baking sheet.
  6. Bake the stuffing balls in the preheated oven at 375°F for 20 minutes.
  7. After 20 minutes, pour the remaining chicken broth over the stuffing balls.
  8. Continue baking for an additional 15 minutes or until the stuffing balls are golden brown and cooked through.
  9. Remove from the oven and let them cool slightly before serving.
