Ingredients:

  • 2 cups pecans, finely chopped

  • 1 cup brown sugar

  • 1/4 teaspoon salt

Instructions:

  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. In a large metal bowl, combine both the brown and white sugars with the vegetable oil and beaten eggs.
  3. Stir with a wooden spoon until the mixture is smooth, and there are no clumps of sugar.
  4. Add the self-rising flour, vanilla extract, and salt. Stir until the flour is evenly distributed throughout the mixture.
  5. Gently fold in the finely chopped pecans, making sure they do not settle to the bottom of the batter.
  6. Lightly grease a 9 x 13-inch baking dish with butter or a non-stick spray.

  8. Bake the pecan bread for 30-35 minutes. Halfway through the baking time, rotate the baking dish 180 degrees to ensure even baking.
  9. To check if the bread is done, insert a toothpick into the center. If it comes out clean, the bread is ready.
