Ingredients
  

  • 2 cups all-purpose flour
  • 0.5 cup brown sugar, firmly packed
  • 0.75 cup cold butter, cubed
  • 16 oz cream cheese, softened
  • 0.5 cup granulated sugar
  • 2 tbsp granulated sugar (for apples)
  • 1 tsp vanilla extract
  • 2 large eggs
  • 3 medium apples, peeled and diced
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.75 cup all-purpose flour (for crumb)
  • 0.75 cup brown sugar, firmly packed (for crumb)
  • 0.5 cup quick-cook oats
  • 0.33 cup cold butter, cubed (for crumb)
  • optional caramel sauce, for serving

Method
 

  1. Preheat oven to 350°F (175°C) and spray a 9x13-inch baking pan with cooking spray.
  2. In a food processor, combine 2 cups flour, ½ cup brown sugar, and ¾ cup cold butter. Pulse until crumbly, press half into the prepared pan, and bake for 15 minutes.
  3. Beat cream cheese until smooth. Add sugar, vanilla, and eggs one at a time until well combined.
  4. In a bowl, toss diced apples with cinnamon, nutmeg, and 2 tablespoons sugar.
  5. In the food processor, combine ¾ cup flour, ¾ cup brown sugar, oats, and ⅓ cup cold butter until crumbly.
  6. Spread cheesecake filling over baked crust. Layer apple mixture evenly on top, then sprinkle crumb topping.
  7. Bake uncovered for 25–35 minutes or until golden brown on top. Cool completely before slicing.
  8. Optional: drizzle with caramel sauce before serving.
