Ingredients

  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 2 tsp ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups finely diced apples (Honeycrisp or Gala)
  • 2 cups powdered sugar
  • 1/3 cup + 2 tbsp apple cider or apple juice

Method
 

  1. Preheat the oven to 400°F (200°C) and grease a baking sheet with nonstick cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
  3. In a large bowl, whisk the melted butter and sugar until smooth.
  4. Add the egg, vanilla extract, and applesauce to the butter mixture and mix until fully combined.
  5. Gradually stir the dry ingredients into the wet ingredients until just combined.
  6. Gently fold in the diced apples.
  7. Scoop 1 tablespoon portions of batter onto the prepared baking sheet, spacing them evenly.
  8. Bake for 10 minutes, then remove from the oven and turn the broiler to high.
  9. Whisk together the powdered sugar and apple cider until smooth and pourable.
  10. Brush the glaze over the warm fritter bites and return the pan to the oven.
  11. Broil for 2 to 4 minutes, rotating the pan frequently, until the glaze bubbles and caramelizes.
  12. Remove from the oven and brush the remaining glaze evenly over the tops.
  13. Let the fritter bites rest for 15 minutes to allow the glaze to set before serving.

Notes

Finely diced apples ensure even baking and a better texture. Watch closely while broiling to prevent burning. These fritter bites are best enjoyed slightly warm and can be gently reheated before serving.
