Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)
  • 1 tbsp brown sugar (optional)
  • fresh parsley, chopped (for garnish)

Equipment

  • mixing bowl
  • baking sheet
  • parchment paper
  • meat thermometer
  • spatula or tongs

Method

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine olive oil, garlic powder, onion powder, smoked paprika, chili powder, oregano, salt, pepper, cayenne (optional), and brown sugar (optional).
  3. Add chicken thighs to the bowl and toss to coat evenly with the seasoning mixture.
  4. Arrange chicken in a single layer on the prepared baking sheet without overlapping.
  5. Bake for 25–30 minutes until golden brown and internal temperature reaches 165°F (75°C).
  6. Let the chicken rest for 5 minutes, then garnish with chopped parsley.
  7. Serve with your favorite sides and enjoy.

Notes

Cooking time may vary depending on the thickness of the thighs. For crispier results, broil 2–3 minutes at the end. This recipe is meal-prep friendly and reheats beautifully. You can swap spices, add lemon zest, or brush with BBQ sauce for a twist.
