Ingredients

  • 4 large russet potatoes, peeled and cut into thin fries
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional)

Equipment

  • large mixing bowl
  • baking sheet
  • parchment paper
  • Sharp knife or mandoline
  • spatula

Method

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut potatoes into even strips and place them in a large mixing bowl.
  3. Toss fries with olive oil, then add garlic, salt, pepper, and paprika. Mix until evenly coated.
  4. Spread fries in a single layer on the prepared baking sheet, avoiding overcrowding.
  5. Bake for 25–30 minutes, flipping halfway through, until golden and crisp.
  6. Sprinkle grated Parmesan over the fries and bake for an additional 5 minutes.
  7. Remove from oven, top with parsley if desired, and serve immediately.

Notes

  • For best results, use fresh Parmesan rather than pre-grated cheese.
  • Thin fries crisp faster, while thicker fries have a fluffier center.
  • Customize seasonings to your preference for a unique flavor every time.
