Ingredients
  

  • 3 cups cooked chicken, shredded or cubed
  • 3 cups cooked pasta (penne or rotini)
  • 1 cup BBQ sauce
  • 1/2 cup ranch dressing
  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup cooked beef sausage, sliced (optional)
  • 1/2 cup corn kernels (optional)
  • 1/4 cup green onions, chopped (optional)

Method
 

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Whisk BBQ sauce and ranch dressing in a large mixing bowl.
  3. Add cooked chicken, pasta, half the cheddar cheese, mozzarella, sausage, and corn. Toss to combine.
  4. Transfer mixture to the baking dish and spread evenly.
  5. Sprinkle remaining cheddar cheese over the top.
  6. Bake uncovered for 20–25 minutes, until bubbly and lightly browned.
  7. Let rest for 5 minutes before serving. Garnish with green onions.

Notes

Freeze the casserole before baking for an easy make-ahead meal. Avoid overcooking the pasta so it stays firm after baking. Add extra BBQ sauce for a deeper smoky flavor.
