Beat cream cheese, powdered sugar, vanilla, salt, and egg yolk until smooth. Chill until firm.
Cream butter, brown sugar, and granulated sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
Whisk flour, baking soda, and salt in a separate bowl. Gradually mix into wet ingredients until just combined.
Gently fold chocolate chips into the dough.
Scoop cookie dough, flatten slightly, add a small scoop of chilled cheesecake filling, and wrap dough around it to seal.
Place cookies on lined baking sheets and bake at 350°F (175°C) for 12–15 minutes until edges are set and centers are soft.
Cool briefly on the baking sheet, then transfer to a wire rack to cool completely.
