Ingredients

  • 2 cups all-purpose flour
  • 1 cup packed brown sugar
  • 0.5 cup granulated sugar
  • 3 large eggs
  • 0.5 cup unsalted butter, softened
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 cups diced apples (about 2 medium apples)
  • 0.5 cup powdered sugar (for glaze, optional)
  • 2 tablespoons brown sugar (for glaze, optional)
  • 1–2 teaspoons milk (for glaze consistency, optional)

Equipment

  • Bundt pan
  • mixing bowls
  • electric mixer or whisk
  • spatula
  • Cooling rack

Method

  1. Preheat the oven to 350°F (175°C). Grease and flour your bundt pan thoroughly.
  2. In a large mixing bowl, beat softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then mix in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and cinnamon.
  5. Gradually add the dry mixture to the wet ingredients, alternating with diced apples. Stir just until combined.
  6. Pour the batter evenly into the prepared bundt pan. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then carefully transfer to a wire rack to cool completely.
  8. In a small bowl, whisk together powdered sugar, brown sugar, and milk until smooth. Drizzle over the cooled cake before serving.

Notes

  • For extra flavor, add a touch of nutmeg or clove to the batter.
  • Ensure apples are peeled and diced for the best texture.
  • If the glaze thickens, add a few more drops of milk until smooth.
