  • 4 cups mashed sweet potatoes
  • 1 cup brown sugar
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 cup chopped pecans
  • 1/2 cup mini marshmallows (optional)

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Combine mashed sweet potatoes, brown sugar, milk, melted butter, eggs, vanilla, and cinnamon in a large mixing bowl. Mix until smooth.
  3. Transfer mixture to a greased baking dish.
  4. Combine chopped pecans with a small amount of brown sugar in a separate bowl.
  5. Sprinkle pecan mixture evenly over the sweet potato base.
  6. Add mini marshmallows on top, if desired.
  7. Bake for 30–35 minutes or until heated through and lightly golden.
  8. Allow casserole to cool slightly before serving.
