Ingredients

  • 1.5 pounds lean ground beef
  • 1 medium yellow onion, diced
  • 1 tablespoon chopped garlic
  • 10.5 ounces condensed cheddar soup
  • 10.5 ounces condensed cream of mushroom soup
  • 0.5 cup milk
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 cups shredded cheddar cheese, divided
  • 1 box Cheddar Bay Biscuit mix with seasoning packet
  • 1 cup shredded cheddar cheese (for biscuit topping)
  • 2 cups milk (for biscuit batter)
  • 0.25 cup butter, melted
  • fresh chopped parsley, for garnish

Equipment

  • Large nonstick skillet
  • mixing bowls
  • 9x13-inch baking dish
  • spatula or spoon
  • oven
  • Pastry brush

Method

  1. Preheat the oven to 350°F (175°C).
  2. Cook ground beef and diced onion in a large skillet over medium heat until browned and tender. Drain excess grease.
  3. Add garlic, condensed cheddar soup, cream of mushroom soup, milk, salt, and pepper. Stir until smooth, then mix in 1 cup of shredded cheddar cheese until melted.
  4. Spread the beef mixture evenly into a greased 9×13-inch baking dish. Sprinkle the remaining cheddar cheese over the top.
  5. In a bowl, mix Cheddar Bay Biscuit mix, shredded cheddar cheese, and milk until combined.
  6. Spread the biscuit batter evenly over the casserole. Bake for 50–55 minutes, or until golden and fully cooked.
  7. Mix melted butter with the seasoning packet and brush over the hot biscuits. Let rest for 5 minutes, garnish with parsley, and serve.

Notes

  • Letting the casserole rest improves slicing and presentation.
  • Adjust seasoning to taste depending on soup brands used.
  • For crispier biscuits, avoid over-spreading the batter too thin.
