Ingredients
  

  • 680 g beef mince (20% fat)
  • 1 small onion, finely grated
  • 2 cloves garlic, minced
  • 60 g breadcrumbs
  • 1 large egg
  • 2 tbsp milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp mustard
  • 1 tsp Italian herb blend
  • 1/2 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 170 g cheese (mozzarella or cheddar), cut into 10–12 cubes
  • 120 g grated cheese (mozzarella or cheddar)
  • 2 tbsp olive oil
  • fresh parsley or chives, chopped (optional)

Method
 

  1. Preheat the oven to 200°C (400°F). Line a baking tray with parchment and lightly brush with olive oil.
  2. Combine all patty ingredients except cheese cubes in a large bowl. Mix gently until just combined.
  3. Divide mixture into 10–12 portions. Flatten each and place a cheese cube in the center.
  4. Wrap meat around cheese fully and shape into patties about 1.5 cm thick.
  5. Arrange patties on tray and brush tops with olive oil.
  6. Bake for 12–14 minutes.
  7. Sprinkle grated cheese on top and bake an additional 5–8 minutes until melted and bubbly.
  8. Rest patties for 3 minutes, garnish with herbs, and serve hot.

  • Wet hands make shaping easier and prevent sticking.
  • Grated onion keeps the patties tender and juicy.
  • Avoid overmixing to maintain a soft texture.
