Method
- Steam or boil cauliflower florets until fork-tender. Drain thoroughly and lightly mash with a fork or potato masher.
- In a large bowl, combine cheddar cheese, sour cream, mayonnaise, Parmesan, green onions, garlic powder, onion powder, salt, and pepper. Mix until smooth.
- Add the mashed cauliflower into the cheese mixture and stir until evenly coated.
- Transfer mixture into a greased baking dish. Bake at 350°F (175°C) for 20–25 minutes, until golden and bubbly.
- Let cool for a few minutes. Garnish with extra green onions or Parmesan before serving.
Notes
For a thicker casserole, reduce the sour cream to ¼ cup. Add a layer of crushed pork rinds or breadcrumbs on top for crunch. Fresh herbs like parsley or dill can be sprinkled on top before serving.
