Cheesy Cauliflower Casserole

Ingredients
  

  • 1 large head cauliflower, cut into florets
  • 2 cups shredded cheddar cheese (sharp or mild)
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped green onions
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • salt and pepper to taste

Method
 

  1. Steam or boil cauliflower florets until fork-tender. Drain thoroughly and lightly mash with a fork or potato masher.
  2. In a large bowl, combine cheddar cheese, sour cream, mayonnaise, Parmesan, green onions, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  3. Add the mashed cauliflower into the cheese mixture and stir until evenly coated.
  4. Transfer mixture into a greased baking dish. Bake at 350°F (175°C) for 20–25 minutes, until golden and bubbly.
  5. Let cool for a few minutes. Garnish with extra green onions or Parmesan before serving.

Notes

For a thicker casserole, reduce the sour cream to ¼ cup. Add a layer of crushed pork rinds or breadcrumbs on top for crunch. Fresh herbs like parsley or dill can be sprinkled on top before serving.
