Ingredients
  

  • 3 cups cooked chicken, shredded or diced
  • 3 cups small-diced potatoes
  • 2 cups broccoli florets
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup heavy cream or milk
  • 2 tbsp butter
  • 1 tsp paprika
  • 1 tsp garlic powder
  • salt and pepper to taste
  • fresh chives or parsley for garnish

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9×13 baking dish.
  2. In a large bowl, combine chicken, potatoes, broccoli, onion, and minced garlic.
  3. Melt butter in a saucepan over medium heat. Add sour cream, heavy cream or milk, paprika, garlic powder, salt, and pepper. Stir until smooth.
  4. Pour the sauce over the chicken mixture and toss until evenly coated.
  5. Transfer mixture to the baking dish and spread evenly.
  6. Sprinkle shredded cheddar cheese on top.
  7. Bake 40–45 minutes until bubbly and golden. Broil 2–3 minutes if desired for crispiness.
  8. Remove from oven, rest briefly, then garnish with chives or parsley before serving.

Notes

Broil at the end for extra crispiness. Mix additional cheese into the casserole for a richer texture. Adjust seasoning to taste.
