Ingredients
  

  • 32 oz frozen shredded hash browns, thawed
  • 1 can (10.25 oz) cream of chicken or cheddar soup
  • 1 pint sour cream
  • 0.5 cup melted butter
  • 0.5 cup finely chopped onion
  • 2 cups grated Colby cheese (divided)
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  2. In a large bowl, mix thawed hash browns, melted butter, soup, sour cream, onion, 1½ cups cheese, and pepper until well combined.
  3. Spread the mixture evenly into the prepared baking dish.
  4. Sprinkle the remaining ½ cup cheese on top.
  5. Bake for 45–50 minutes, or until golden brown and bubbly.
  6. Let cool for 5–10 minutes before serving.

Notes

  • For best flavor, use a mix of cheeses such as Colby and sharp cheddar.
  • If preparing ahead, cover tightly with foil and refrigerate until baking.
  • Great as a make-ahead holiday side dish or potluck favorite.
