Cheesy Ranch Oven Roasted Potatoes

Ingredients
  

  • 2 1/2 lb Yukon Gold or red potatoes, unpeeled and cubed
  • 2 tbsp olive oil
  • 1 packet dry ranch seasoning mix
  • salt, to taste
  • black pepper, to taste
  • 8 oz shredded cheddar cheese
  • 6 oz bacon, cooked and chopped
  • 1/4 cup chopped chives

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss potato cubes with olive oil, ranch seasoning, salt, and pepper until evenly coated.
  3. Spread potatoes in a single layer on a rimmed baking sheet. Roast for 20 minutes, toss, roast another 20 minutes, toss again, then roast 15 more minutes until golden and crispy.
  4. Gather potatoes toward the center of the pan, sprinkle evenly with cheddar cheese, and return to the oven for 3–5 minutes until melted.
  5. Remove from oven, top with chopped bacon and chives, and serve immediately.

Notes

Avoid overcrowding the pan for maximum crispiness. Yukon Gold potatoes offer a creamy interior, while red potatoes hold their shape well. Best served fresh, but leftovers reheat nicely in the oven or air fryer.
