Method
- Preheat oven to 400°F (200°C).
- Toss potato cubes with olive oil, ranch seasoning, salt, and pepper until evenly coated.
- Spread potatoes in a single layer on a rimmed baking sheet. Roast for 20 minutes, toss, roast another 20 minutes, toss again, then roast 15 more minutes until golden and crispy.
- Gather potatoes toward the center of the pan, sprinkle evenly with cheddar cheese, and return to the oven for 3–5 minutes until melted.
- Remove from oven, top with chopped bacon and chives, and serve immediately.
Notes
Avoid overcrowding the pan for maximum crispiness. Yukon Gold potatoes offer a creamy interior, while red potatoes hold their shape well. Best served fresh, but leftovers reheat nicely in the oven or air fryer.
