Ingredients
  

  • 2 cups all-purpose flour
  • 1.75 cups granulated sugar
  • 0.75 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter, softened
  • 3.5 cups powdered sugar
  • 0.5 cup unsweetened cocoa powder
  • 0.5 cup milk
  • 1 teaspoon vanilla extract (for frosting)

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla extract. Beat on medium speed for about 2 minutes until smooth.
  4. Slowly pour in boiling water. The batter will be thin — this creates a moist texture.
  5. Divide batter evenly between the pans and bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  6. Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  7. To make frosting: Beat butter until creamy. Gradually add powdered sugar and cocoa powder, alternating with milk and vanilla, until smooth and fluffy.
  8. Place one cake layer on a plate, spread frosting on top, then place the second layer over it and frost the top and sides.
  9. Decorate with chocolate shavings or sprinkles. Slice and enjoy!

Notes

For a richer flavor, use dark or Dutch-process cocoa powder. Refrigerate leftovers to keep them fresh, and bring to room temperature before serving. Add a drizzle of ganache or a sprinkle of sea salt for an extra layer of indulgence.
