- Line a baking sheet with parchment paper. In a medium bowl, stir together diced strawberries, Greek yogurt, and vanilla extract until evenly coated.
- Scoop about 2 tablespoons of the mixture onto the baking sheet, leaving space between clusters. Freeze for 30–45 minutes until firm.
- Melt chocolate chips and coconut oil in the microwave in 30-second intervals, stirring until smooth.
- Dip frozen clusters into melted chocolate, return to the baking sheet, and allow chocolate to harden before serving.
