  • 2 1/2 pounds sweet potatoes, peeled and diced into 1-inch cubes
  • 6 tablespoons melted butter
  • 1/4 cup real maple syrup
  • 1/2 teaspoon cinnamon powder
  • 1/2 teaspoon salt
  • spray oil (for coating the pan)

Method
 

  1. Preheat your oven to 375°F (190°C). Spray a large sheet pan with cooking spray to prevent sticking.
  2. Peel and dice the sweet potatoes into 1-inch cubes so they cook evenly and get tender with crisp edges.
  3. In a small bowl, whisk together the melted butter, maple syrup, cinnamon, and salt until smooth and well blended.
  4. Spread the sweet potatoes in a single layer on the prepared pan. Pour the maple butter mixture over them and toss to coat evenly.
  5. Roast for 35 minutes, stirring halfway through, until golden, caramelized, and fork-tender.

Notes

  • Use real maple syrup for the richest flavor—artificial syrup will make the dish overly sweet.
