Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup light brown sugar, packed
  • 1 large egg
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1 tsp ground cinnamon, divided
  • 3 tbsp granulated sugar (for topping)

Equipment

  • 8×8-inch baking pan
  • parchment paper optional, but recommended
  • mixing bowls
  • whisk or electric mixer
  • spatula
  • measuring cups and spoons

Method

  1. Set oven to 350°F (175°C). Grease or line an 8×8-inch pan with parchment paper.
  2. In a bowl, whisk melted butter and brown sugar until smooth. Add egg, honey, and vanilla extract; whisk again.
  3. Gently stir in flour, salt, and ½ teaspoon cinnamon until just combined. Do not overmix.
  4. In a small bowl, combine granulated sugar and remaining ½ teaspoon cinnamon.
  5. Pour batter into prepared pan and sprinkle evenly with cinnamon-sugar mixture. Bake for 22–25 minutes until golden brown and a toothpick comes out clean.
  6. Let blondies cool fully before cutting into squares for neat slices.

Notes

  • Cool completely before slicing to prevent crumbling.
  • For chewier blondies, slightly underbake and allow them to finish setting in the pan.
  • Double the recipe for a larger crowd by baking in a 9×13-inch dish.
