Classic Cream Cheese Pie

Ingredients
  

  • 16 oz cream cheese, softened
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 prepared 9-inch graham cracker crust
  • 1 cup sour cream
  • 2 tbsp granulated sugar (for topping)
  • 1/2 tsp vanilla extract (for topping)

Equipment

  • 9-inch pie pan (if not using ready-made crust)

Method
 

  1. Set oven to 350°F (175°C).
  2. In a large bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  3. Pour filling into the prepared crust and spread evenly. Place on a baking sheet and bake for about 35 minutes, or until the center is set but slightly jiggly.
  4. While baking, stir together sour cream, sugar, and vanilla in a small bowl.
  5. Remove pie from oven, increase oven temperature to 450°F (230°C), spread sour cream topping evenly, and bake for 5 minutes.
  6. Let pie cool completely at room temperature, then refrigerate for at least 1 hour before serving.

Notes

Use full-fat cream cheese for the richest flavor.
For a firmer crust, refrigerate the crust for 15 minutes before adding filling.
Garnish with fruit, chocolate drizzle, or nuts for a bakery-style finish.
