Ingredients
  

  • 1.5 lbs chicken tenders, trimmed
  • 1 cup plain Greek yogurt or mayonnaise
  • 1 packet ranch seasoning mix (1 ounce)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup crushed Ritz crackers or panko breadcrumbs
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • 1/4 tsp black pepper
  • cooking spray or olive oil

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In one bowl, mix Greek yogurt (or mayo) with ranch seasoning. In a second bowl, combine cheddar, Parmesan, crushed crackers, garlic powder, paprika, and black pepper.
  3. Dip each chicken tender into the yogurt mixture, then press into the cheese and cracker mixture until coated.
  4. Arrange tenders on the baking sheet. Lightly spray with cooking oil. Bake for 25–30 minutes, flipping halfway through, until the internal temperature reaches 165°F (74°C).
  5. Serve hot with your favorite dipping sauces.

Notes

Freshly shredded cheese melts best. Avoid overcoating to keep the crust crispy. Customize with extra spices or herbs to your liking.
