Ingredients
  

  • 1 tbsp olive oil
  • 12 oz chicken sausage, sliced
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups low-sodium chicken broth
  • 1/2 cup heavy cream or Greek yogurt
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup shredded cheddar cheese or feta
  • 1 cup spinach or kale (optional)
  • 1/2 cup sun-dried tomatoes (optional)
  • 1/2 tsp red pepper flakes (optional)

Method
 

  1. Heat olive oil in a large skillet over medium heat. Brown the chicken sausage for 3–5 minutes, then remove and set aside.
  2. In the same skillet, cook the onion until soft. Add garlic and cook briefly until fragrant.
  3. Stir in the orzo and toast for about 1 minute.
  4. Add chicken broth, thyme, paprika, salt, and pepper. Simmer for 8–10 minutes until orzo is tender.
  5. Lower the heat and stir in the cream and cheese until smooth and creamy.
  6. Add the sausage back to the skillet along with any optional add-ins. Stir to combine and serve warm.

Notes

For best results, avoid overcooking the orzo and finish with fresh parsley or lemon zest for balance. Greek yogurt can be used instead of cream for a lighter option. Serve immediately for the creamiest texture.
