Ingredients
  

  • 3–4 pieces boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces
  • 16 oz fresh or frozen gnocchi
  • 8 oz cream cheese
  • 2 cups low-sodium chicken broth
  • 4 cups fresh spinach
  • 1 cup shredded cheddar cheese
  • 1/2 cup crispy bacon bits
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt and pepper to taste

Method
 

  1. Cut the chicken into bite-sized pieces and measure out all ingredients for easy preparation.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the chicken and cook for 5–7 minutes until golden brown and cooked through. Remove any excess liquid if necessary.
  3. Reduce heat to medium-low. Add the cream cheese and chicken broth, stirring until the cream cheese melts and forms a smooth sauce.
  4. Add the gnocchi and spinach to the skillet, stirring to coat evenly. Cover and let simmer for 5–7 minutes, until the gnocchi are tender and the spinach is wilted.
  5. Stir in the shredded cheddar cheese and crispy bacon bits until melted and well combined.
  6. Spoon into bowls, garnish with extra cheese or bacon if desired, and serve hot.

Notes

  • You can use turkey bacon for a lighter version.
  • For an extra burst of flavor, sprinkle with green onions or fresh parsley before serving.
  • This dish pairs perfectly with a side of roasted garlic bread or a light Caesar salad.
