Ingredients

  • 1 lb chicken breasts or chicken tenders (cut into 1-inch strips if using breasts)
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs (or regular breadcrumbs)
  • 1/2 cup grated Parmesan cheese (optional)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • olive oil spray

Equipment

  • baking sheet
  • parchment paper or silicone baking mat
  • wire rack (optional but recommended)
  • mixing bowls
  • tongs or fork

Method

  1. Cut chicken breasts into strips if not using tenders. Season lightly with salt and pepper.
  2. Bowl 1: Beat the eggs until smooth.
Bowl 2: Mix breadcrumbs, Parmesan (if using), garlic powder, paprika, onion powder, salt, and pepper.
  3. Dip each piece into the egg, then into the breadcrumb mixture. For a thicker coating, repeat the process.
  4. Line baking sheet with parchment or silicone mat. Place a wire rack on top if available.
  5. Lay breaded chicken strips on the sheet, leaving space between each piece.
  6. Preheat oven to 400°F (200°C). Spray tenders with olive oil and bake for 20–25 minutes, flipping halfway.
  7. Ensure chicken reaches an internal temperature of 165°F (74°C).
  8. Let rest a few minutes before serving with your favorite dipping sauces.

Notes

  • For the crispiest tenders, always bake on a wire rack.
  • These chicken tenders pair perfectly with homemade fries for a complete meal.
  • Leftovers can be chopped and added to wraps, salads, or sandwiches.
