Cut chicken breasts into strips if not using tenders. Season lightly with salt and pepper.
Bowl 1: Beat the eggs until smooth.Bowl 2: Mix breadcrumbs, Parmesan (if using), garlic powder, paprika, onion powder, salt, and pepper. Dip each piece into the egg, then into the breadcrumb mixture. For a thicker coating, repeat the process.
Line baking sheet with parchment or silicone mat. Place a wire rack on top if available.
Lay breaded chicken strips on the sheet, leaving space between each piece.
Preheat oven to 400°F (200°C). Spray tenders with olive oil and bake for 20–25 minutes, flipping halfway.
Ensure chicken reaches an internal temperature of 165°F (74°C).
