Ingredients
  

  • 2 pounds small potatoes (baby Yukon Gold or red potatoes)
  • 1/4 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried Italian herbs
  • 1/4 tsp black pepper
  • 1/4 tsp salt, or to taste
  • fresh parsley, chopped (optional)

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry potatoes thoroughly. Cut into 1-inch pieces or halve/quarter if small.
  3. In a large bowl, mix olive oil, Parmesan, garlic powder, onion powder, Italian herbs, black pepper, and salt.
  4. Add potatoes and toss to coat evenly.
  5. Spread potatoes in a single layer on a baking sheet without overcrowding.
  6. Bake for 30–40 minutes, flipping halfway, until golden and crispy.
  7. Garnish with fresh parsley if desired and serve hot.

Notes

For maximum crispiness, be sure the potatoes are fully dry before seasoning. Adjust herbs and spices to suit your taste. Fresh rosemary or thyme also work wonderfully.
