Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
In a large skillet, brown the ground beef over medium-high heat until no pink remains. Drain excess grease.
Stir in taco seasoning, diced tomatoes with chilies (including liquid), refried beans, and enchilada sauce. Simmer for 5 minutes, stirring occasionally.
Spread half of the crushed Doritos evenly over the bottom of the baking dish. Pour the beef mixture over the chips.
Sprinkle cheddar and Monterey Jack cheeses over the top of the beef layer.
Add the remaining crushed Doritos evenly across the top.
Bake for 20–25 minutes, or until the cheese is melted and the casserole is bubbling.
Let the casserole rest for 5 minutes before serving. Top with your favorite garnishes like sour cream, salsa, or cilantro.
