- Preheat oven to 325°F (160°C) and grease two loaf pans.
- In a large bowl, whisk together cake mix, self-rising flour, and cinnamon.
- Stir in the mashed apple pie filling and beaten eggs until just combined.
- Gently fold in the chopped fresh apple.
- Pour batter evenly into the prepared loaf pans.
- Mix sugar and cinnamon, then sprinkle on top of each loaf.
- Bake for 35–45 minutes or until a toothpick comes out clean.
- Cool in pans for 10 minutes, then transfer to a wire rack.
Notes
- For a stronger spice flavor, add nutmeg or allspice to the batter.
- This bread tastes even better the next day after flavors meld.
- Serve slightly warmed for maximum flavor.
