- Preheat oven to 350°F (175°C). Spray a 9×13-inch baking dish with cooking spray.
- Spread chopped cabbage evenly in baking dish. Add onions on top.
- Mix cream of chicken soup, mayonnaise, and ½ stick melted butter in a bowl until smooth. Spread evenly over onions.
- In another bowl, combine crushed Ritz crackers, cheddar cheese, and 1 stick melted butter. Mix well.
- Sprinkle cracker mixture evenly over the casserole base.
- Bake uncovered for 45 minutes, until cabbage is tender and topping golden brown.
- Let sit 5–10 minutes before serving warm.
Notes
For a lighter version, replace mayo with sour cream or Greek yogurt. Use pre-shredded coleslaw mix as a shortcut instead of chopping cabbage. Add red pepper flakes for a hint of spice.
