Easy Cabbage Casserole

Ingredients
  

  • 1 small cabbage, chopped
  • 1 Vidalia onion, chopped
  • 1 can cream of chicken soup
  • 1 cup mayonnaise
  • 1/2 stick butter, melted
  • 1 sleeve Ritz crackers, crushed
  • 1 cup shredded cheddar cheese
  • 1 stick butter, melted (for topping)
  • cooking spray

Method
 

  1. Preheat oven to 350°F (175°C). Spray a 9×13-inch baking dish with cooking spray.
  2. Spread chopped cabbage evenly in baking dish. Add onions on top.
  3. Mix cream of chicken soup, mayonnaise, and ½ stick melted butter in a bowl until smooth. Spread evenly over onions.
  4. In another bowl, combine crushed Ritz crackers, cheddar cheese, and 1 stick melted butter. Mix well.
  5. Sprinkle cracker mixture evenly over the casserole base.
  6. Bake uncovered for 45 minutes, until cabbage is tender and topping golden brown.
  7. Let sit 5–10 minutes before serving warm.

Notes

For a lighter version, replace mayo with sour cream or Greek yogurt. Use pre-shredded coleslaw mix as a shortcut instead of chopping cabbage. Add red pepper flakes for a hint of spice.
