Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Heat milk, butter, and salt in a saucepan over medium heat until it begins to simmer.
Remove from heat and add flour all at once. Stir until a dough forms and pulls away from the pan.
Let the dough cool for about 5 minutes.
Add eggs one at a time, mixing well after each until the dough becomes smooth and glossy.
Fold in grated cheese and any optional seasonings.
Drop tablespoon-sized portions of dough onto the baking sheet, leaving space between each.
Bake 20–25 minutes until golden, puffed, and crisp.
Serve warm or cool on a rack.
