Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter
  • 1 cup whole milk
  • 4 large eggs
  • 1 1/2 cups grated sharp cheddar cheese or mix of Gruyère and cheddar
  • 1/2 tsp salt
  • 1/2 teaspoon garlic powder or paprika (optional)

Method
 

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Heat milk, butter, and salt in a saucepan over medium heat until it begins to simmer.
  3. Remove from heat and add flour all at once. Stir until a dough forms and pulls away from the pan.
  4. Let the dough cool for about 5 minutes.
  5. Add eggs one at a time, mixing well after each until the dough becomes smooth and glossy.
  6. Fold in grated cheese and any optional seasonings.
  7. Drop tablespoon-sized portions of dough onto the baking sheet, leaving space between each.
  8. Bake 20–25 minutes until golden, puffed, and crisp.
  9. Serve warm or cool on a rack.
