Easy Taco Soup

Ingredients
  

  • 1 lb ground hamburger
  • 1 small onion, chopped
  • 1 can (10 oz) Rotel tomatoes with chilies
  • 4 oz cream cheese
  • 1 1/2 cups chicken broth or stock
  • 1 tsp garlic powder
  • 1 packet taco seasoning
  • Optional toppings: shredded cheddar cheese, sour cream, tortilla chips, chopped cilantro, sliced jalapeños

Method
 

  1. In a skillet, cook ground beef and onion over medium heat until browned. Drain excess grease.
  2. In a large soup pot, melt cream cheese over medium heat, stirring constantly.
  3. Add cooked beef and onion to the pot. Stir in Rotel tomatoes, chicken broth, garlic powder, and taco seasoning. Mix until smooth.
  4. Bring to a gentle simmer and cook for 30 minutes, stirring occasionally.
  5. Ladle soup into bowls and top with shredded cheese, sour cream, tortilla chips, cilantro, or jalapeños.

Notes

  • Adjust seasoning to taste—some taco seasoning packets contain more salt than others.
  • For a richer flavor, substitute beef broth for chicken broth.
  • This recipe doubles easily if you’re cooking for a crowd.
