Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tbsp apple cider vinegar or white vinegar
  • 5 tbsp vegetable or canola oil
  • 1 1/2 tsp vanilla extract
  • 1 cup water or apple cider
  • 1 cup chopped Granny Smith apple
  • 1/2 cup chopped pecans or walnuts

Method
 

  1. Preheat the oven to 350°F (180°C). Spray an 8×8 baking dish with non-stick spray.
  2. In a large bowl, whisk flour, sugar, cinnamon, nutmeg, baking soda, and salt until combined.
  3. Make three small depressions in the dry mixture—add vinegar to one, vanilla to another, and oil to the larger one. Pour water or apple cider over everything and stir until smooth.
  4. Fold in chopped apples and pecans, then pour batter into the prepared baking dish.
  5. Bake for 40–45 minutes or until a toothpick comes out clean.
  6. Cool for 15 minutes before serving. Enjoy warm or at room temperature.

Notes

Ensure your baking soda and vinegar are fresh for a proper rise. Using apple cider instead of water boosts the apple flavor. At high altitudes, baking may take up to 50 minutes.
