Ingredients

  • 1 frozen pie crust
  • 1 1/4 cup sugar
  • 3 tbsp cornstarch
  • 1 1/4 cups water
  • 3 tbsp strawberry jelly
  • 2 cups fresh strawberries, sliced

Equipment

  • 9-inch pie pan
  • Medium saucepan
  • Whisk and mixing spoon
  • baking sheet
  • Wire cooling rack

Method

  1. Preheat oven to 375°F (190°C). Bake crust 10–15 minutes until golden. Cool completely.
  2. In a saucepan, whisk sugar, cornstarch, and water. Bring to boil, stir until thick and translucent (about 5 minutes). Remove from heat and whisk in strawberry jelly. Cool to room temperature.
  3. Arrange sliced strawberries in cooled crust. Pour glaze evenly over berries.
  4. Refrigerate at least 4 hours (overnight for best results).
  5. Slice, top with whipped cream, and savor!

Notes

For a glossy finish, brush extra jelly over strawberries after glazing. Double the recipe for a deep-dish pie. Garnish with mint leaves for a pop of color.
