Ingredients
  

  • 1.5 pounds boneless, skinless chicken breasts or thighs, cut into chunks
  • 1.5 pounds Yukon gold or red potatoes, cut into 1-inch pieces
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • salt and black pepper, to taste
  • 2 tablespoons olive oil (optional, for browning)
  • 2 tablespoons fresh parsley, chopped (garnish)

Method
 

  1. Cut chicken into bite-sized pieces and potatoes into 1-inch chunks.
  2. If desired, heat olive oil in a skillet and lightly brown the chicken for added flavor.
  3. Transfer chicken and potatoes to the slow cooker.
  4. Whisk heavy cream, Parmesan cheese, garlic, Italian seasoning, paprika, salt, and pepper in a bowl.
  5. Pour sauce over chicken and potatoes. Cover and cook on low for 6–7 hours or high for 3.5–4 hours.
  6. Stir gently to coat everything evenly. Garnish with fresh parsley and serve warm.

Notes

  • For extra creaminess, stir in a little more Parmesan at the end
  • Add vegetables near the end of cooking to prevent over-softening
  • This recipe works well for meal prep and reheats beautifully
  • Serve straight from the crockpot for easy family-style meals
