- Cut chicken into bite-sized pieces and potatoes into 1-inch chunks.
- If desired, heat olive oil in a skillet and lightly brown the chicken for added flavor.
- Transfer chicken and potatoes to the slow cooker.
- Whisk heavy cream, Parmesan cheese, garlic, Italian seasoning, paprika, salt, and pepper in a bowl.
- Pour sauce over chicken and potatoes. Cover and cook on low for 6–7 hours or high for 3.5–4 hours.
- Stir gently to coat everything evenly. Garnish with fresh parsley and serve warm.

- For extra creaminess, stir in a little more Parmesan at the end
- Add vegetables near the end of cooking to prevent over-softening
- This recipe works well for meal prep and reheats beautifully
- Serve straight from the crockpot for easy family-style meals
