Ingredients
  

  • 1/2 cup plain Greek yogurt
  • 1/3 cup melted coconut oil or unsalted butter
  • 1/2 cup maple syrup or honey
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour (or almond flour for gluten-free)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup chocolate chips (plus extra for topping)

Method
 

  1. Preheat oven to 350°F (175°C). Line or grease an 8×8-inch pan with parchment paper.
  2. In a medium bowl, whisk together Greek yogurt, coconut oil (or butter), maple syrup (or honey), eggs, and vanilla extract until smooth.
  3. Sift in cocoa powder, flour, baking powder, and salt. Fold gently until just combined.
  4. Stir in the chocolate chips evenly.
  5. Pour the batter into the prepared pan, spreading evenly. Top with extra chocolate chips.
  6. Bake for 20–25 minutes, or until the center is set but still slightly soft.
  7. Let cool completely before cutting into squares.

Notes
