- Preheat the oven to 375°F (190°C) and grease a 9×9-inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft, then stir in the garlic.
- Add the ground beef, season with salt, pepper, paprika, and thyme, and cook until browned. Drain excess fat and set aside.
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook briefly.
- Slowly whisk in the cream and cook until the sauce thickens.
- Add sweet corn, garlic powder, salt, and shredded cheese to the sauce and stir until smooth.
- Spread the cooked beef evenly in the baking dish. Add cooked rice or pasta if using.
- Pour the creamy corn sauce over the beef and spread evenly.
- Mix breadcrumbs with melted butter and sprinkle over the top. Add extra cheese if desired.
- Bake uncovered for 25–30 minutes until golden and bubbly. Rest for 5–10 minutes before serving.
Notes
Let the casserole rest for 5–10 minutes before serving so the sauce can set properly. This dish reheats very well and can be frozen after baking. Serve with a green salad or steamed vegetables for a balanced meal.
