- Preheat oven to 400°F (200°C).
 - In a mixing bowl, combine melted butter, honey, garlic, olive oil, thyme, salt, and pepper. Mix well to create the glaze.
 - Place carrots on a baking sheet in a single layer.
 - Pour glaze over carrots, tossing until evenly coated.
 - Roast for 25–30 minutes, tossing halfway through. Carrots should be tender with caramelized edges.
 - Remove from oven, garnish with parsley if desired, and serve warm.
 
Notes
- Regular carrots can replace baby carrots; just slice them into sticks or rounds.
 - For a richer glaze, simmer the honey-butter mixture briefly on the stovetop.
 - Add red pepper flakes for heat or lemon juice for brightness.
 - This dish can be made ahead and reheated for holidays or busy weeknights.
