Ingredients
  

  • 1 lb (450g) baby carrots, peeled or unpeeled
  • 2 tbsp unsalted butter, melted
  • 2 tbsp honey
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional for garnish)

Method
 

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine melted butter, honey, garlic, olive oil, thyme, salt, and pepper. Mix well to create the glaze.
  3. Place carrots on a baking sheet in a single layer.
  4. Pour glaze over carrots, tossing until evenly coated.
  5. Roast for 25–30 minutes, tossing halfway through. Carrots should be tender with caramelized edges.
  6. Remove from oven, garnish with parsley if desired, and serve warm.

Notes

  • Regular carrots can replace baby carrots; just slice them into sticks or rounds.
  • For a richer glaze, simmer the honey-butter mixture briefly on the stovetop.
  • Add red pepper flakes for heat or lemon juice for brightness.
  • This dish can be made ahead and reheated for holidays or busy weeknights.
