- Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- Combine corn kernels, creamed corn, sour cream, cheddar, honey, melted butter, and eggs in a large bowl. Stir until smooth.
- Add cornmeal, baking powder, salt, pepper, and garlic powder. Mix until fully combined.
- Pour mixture into the baking dish and smooth the top.
- Bake for 40–45 minutes, until golden and set in the center.
- Let cool a few minutes before serving. Garnish with herbs if desired.
Notes
Use raw local honey for deeper flavor. Sharp cheddar adds a stronger savory balance. Allow the casserole to rest before slicing to help it set properly.
