  • 2 cups fresh corn kernels (or 1 can, drained)
  • 1 cup creamed corn
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup honey
  • 1/2 cup unsalted butter, melted
  • 1 cup cornmeal
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 large eggs, beaten
  • chopped chives or parsley (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Combine corn kernels, creamed corn, sour cream, cheddar, honey, melted butter, and eggs in a large bowl. Stir until smooth.
  3. Add cornmeal, baking powder, salt, pepper, and garlic powder. Mix until fully combined.
  4. Pour mixture into the baking dish and smooth the top.
  5. Bake for 40–45 minutes, until golden and set in the center.
  6. Let cool a few minutes before serving. Garnish with herbs if desired.

Notes

Use raw local honey for deeper flavor. Sharp cheddar adds a stronger savory balance. Allow the casserole to rest before slicing to help it set properly.
