  • 1 9-inch unbaked pie crust

Method
 

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, whisk eggs until frothy.
  3. Add sugar, softened butter, and flour. Beat until smooth.
  4. Stir in buttermilk, lemon juice, vanilla, and nutmeg. Mix until creamy.
  5. Pour filling into the unbaked crust.
  6. Bake 40–60 minutes until the center is firm and golden.
  7. Let cool for at least 1 hour before serving.

Notes

  • The pie can be served warm, but cooling allows the custard to set properly.
  • Using freshly grated nutmeg enhances the flavor.
  • For best results, use full-fat buttermilk.
