Ingredients
  

  • 3 ripe bananas, mashed
  • 1/3 cup butter, melted
  • 1 tsp baking soda
  • 1 pinch salt
  • 3/4 cup granulated sugar
  • 1 large egg, beaten
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup Nutella

Equipment

  • Muffin liners or nonstick spray
  • Toothpick or knife
  • Wire cooling rack

Method
 

  1. Preheat oven to 350°F (175°C). Line or grease a muffin tin.
  2. Mash bananas in a large bowl until smooth.
  3. Stir in melted butter. Add baking soda, salt, and sugar and mix well. Stir in egg and vanilla.
  4. Gently fold in flour until just combined. Do not overmix.
  5. Spoon half the batter into muffin cups. Add a teaspoon of Nutella to each, then top with remaining batter.
  6. Swirl Nutella gently with a toothpick. Bake 18–20 minutes, until a toothpick comes out clean.
  7. Cool in pan for 5 minutes, then transfer to a wire rack.

Notes

  • Slightly warming Nutella makes swirling easier.
  • Muffins taste even better the next day.
  • For bakery-style tops, fill muffin cups almost full.
