Old Fashioned Zucchini Bread

Ingredients
  

  • 2 cups grated zucchini (about 2 medium)
  • 1 cup granulated sugar
  • 0.5 cup packed brown sugar
  • 0.5 cup vegetable oil
  • 3 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 0.5 cup chopped walnuts or pecans (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Grate zucchini and squeeze out excess moisture using a towel or cheesecloth.
  3. In a large bowl, whisk granulated sugar, brown sugar, and oil. Add eggs and vanilla, whisking until smooth.
  4. In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  5. Fold dry mixture into wet mixture until just combined. Stir in zucchini and nuts if desired.
  6. Pour batter into prepared loaf pan and smooth the top.
  7. Bake 50–60 minutes, or until a toothpick comes out clean.
  8. Cool bread in pan briefly, then transfer to a wire rack to cool completely before slicing.

Notes

For extra flavor, sprinkle cinnamon sugar on top before baking. Be sure to squeeze out zucchini moisture to avoid soggy bread. Bread is best served slightly warm.
