One-Pan Cheesy Ranch Potatoes and Sausage

Ingredients
  

  • 1 lb baby potatoes, halved
  • 12 oz smoked sausage (kielbasa or andouille), sliced
  • 2 tbsp olive oil
  • 1 packet ranch seasoning mix (about 1 ounce)
  • 1 cup shredded cheddar cheese
  • 1 cup chopped broccoli (optional)
  • salt and pepper to taste
  • fresh parsley for garnish (optional)

Method
 

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine halved potatoes and sliced sausage.
  3. Drizzle olive oil and sprinkle ranch seasoning over the mixture. Toss well until evenly coated.
  4. Spread the mixture onto a baking sheet in a single layer.
  5. Roast for 25 minutes, stirring halfway through for even cooking.
  6. If adding broccoli, stir it in after 25 minutes, then roast for an additional 10 minutes.
  7. Remove from oven, sprinkle cheddar cheese evenly on top, and return to bake for another 5 minutes, or until cheese is bubbly.
  8. Let cool slightly, garnish with parsley, and serve warm.

Notes

Substitute smoked sausage with turkey or chicken sausage for a lighter meal. Add bell peppers or onions for extra flavor. Sprinkle with red pepper flakes for a spicy kick. Makes excellent leftovers and reheats easily in the oven or microwave.
