Method
- Preheat oven to 400°F (200°C).
- In a large bowl, combine halved potatoes and sliced sausage.
- Drizzle olive oil and sprinkle ranch seasoning over the mixture. Toss well until evenly coated.
- Spread the mixture onto a baking sheet in a single layer.
- Roast for 25 minutes, stirring halfway through for even cooking.
- If adding broccoli, stir it in after 25 minutes, then roast for an additional 10 minutes.
- Remove from oven, sprinkle cheddar cheese evenly on top, and return to bake for another 5 minutes, or until cheese is bubbly.
- Let cool slightly, garnish with parsley, and serve warm.
Notes
Substitute smoked sausage with turkey or chicken sausage for a lighter meal. Add bell peppers or onions for extra flavor. Sprinkle with red pepper flakes for a spicy kick. Makes excellent leftovers and reheats easily in the oven or microwave.
