One-Pot Creamy Cajun Sausage Pasta

Ingredients
  

  • 12 oz smoked sausage, sliced
  • 8 oz farfalle pasta, uncooked
  • 1 tbsp olive oil
  • 1/2 medium onion, finely diced
  • 3 cloves garlic, minced
  • 14.5 oz diced tomatoes, undrained
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 1/2–2 tbsp Cajun seasoning
  • 1/2 tsp paprika (optional)
  • salt and pepper, to taste
  • fresh parsley or green onions, for garnish
  • 1/2 cup diced bell peppers (optional)
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese (optional)

Method
 

  1. Heat the olive oil in a large skillet or Dutch oven over medium-high heat.
  2. Add the sliced sausage and brown on both sides. Remove from the skillet and set aside.
  3. Sauté the diced onion until soft, then add the garlic and cook briefly until fragrant.
  4. Return the sausage to the skillet and add the pasta, diced tomatoes, chicken broth, and seasonings.
  5. Bring to a boil, then reduce heat, cover, and simmer for 12–14 minutes until pasta is tender.
  6. Lower the heat and stir in the heavy cream until combined.
  7. Add the shredded cheddar cheese and stir until melted and smooth.
  8. Simmer uncovered for a few minutes until the sauce thickens to your liking.
  9. Garnish with fresh parsley or green onions and serve hot.

Notes

This dish thickens as it sits, so add a splash of chicken broth or cream when reheating if needed. Adjust the Cajun seasoning to your spice tolerance, and finish with fresh herbs for the best flavor.
